Deep Cello grew out of a conversation over cocktails at a party in 2008. The sequence: Kelly noticed how good Justin’s coffees were. She suggested to Justin that maybe we should build a company around them with fun brands and his expert roasting. The Result: Deep Cello quickly landed on the pages of some of the best professional coffee bloggers in the business. Daily Cup of Coffee, Pure Coffee, and CoffeeGeek, all say that Deep Cello delivers great coffee that you can afford to drink every day.

A top-tier roaster, Justin fell in love with coffee while on a trip to Europe and wondered: “how can I bring this kind of quality back home?” Starting with a popcorn popper on the fire escape of his New York apartment and buying green coffees in Brooklyn, he gradually began to understand the complexities of roasting coffee and became more and more involved.
With ten years of professional roasting experience behind him and a deep appreciation of professional roasting, he has developed a unique roasting style and roasts that one would be hard pressed to find anywhere else.
A professional cellist and gourmet who has performed for seven years as cellist with the New York Metropolitan Opera, the Oregon Symphony, Pink Martini, Harry Connick Jr, Portland Cello Project, and many others, Justin brings his full artistic nature to the roasting process.
“It’s really hard to find great coffee. Only a few percent of all the coffees in the world qualify to be called a ‘great coffee.‘ I seek out these coffees, literally cupping hundreds of samples in a given year, and only purchase those beans which meet my quality standards.”
“Most blended roasts, like a typical “Kona Blend,” contain only a small percentage of fancy Kona beans. And for that reason blends are wrongly considered not good as ‘single-varietals’ estate coffees. We thought for Deep Cello, ‘what if we could combine first-growth beans into roasts where great beans could enhance each other? We drink them here and actually prefer them to most single varietal or estate coffees. We encourage you to put any bias aside and see for yourself. It’s a whole new way to think about coffee.”
