This is a great article on how to tell if the coffee you purchase is fresh. Coffee is at its best from 3-7 days after roasting, and good for about three weeks. Vacuum seals and valve seals can give you an extra two weeks. Tests show that coffee freezes well, but I never do that because I think it dehydrates the beans; but freezer is probably better than fridge.
